Cranberry Orange Muffins

Cranberry orange muffins are warm and refreshing for breakfast or a quick snack. Muffins are also excellent for weekly meal prep and freeze well for a few months.



Ingredients:


Two cups of all-purpose flour

Two teaspoons vanilla

1 cup sugar

1/2 can cranberry sauce w/ whole berries

1 cup orange pulp

Two eggs

Two teaspoons of baking powder

Six tablespoons melted butter

1/2 cup milk

1/2 teaspoon salt

Pinch or two of cinnamon


Directions:


Mix all ingredients and add the fruit last. Bake for 30-45 minutes at 375 degrees.
