If you love enchiladas, you'll enjoy this delicious breakfast version. I got a very disappointing image of the enchiladas, so here is a picture of a rooster instead. I'll also link a short video if any instructions are unclear.
#1 Gravy Mix
1 1/3 cups powdered milk
1/2 cup flour
1/2 cup melted butter
4 cups water
One tablespoon of black pepper
Salt to taste
Heat and whisk all the ingredients in a medium saucepan. Bring to a boil, then remove from heat. The gravy will thicken in a couple of minutes.
#2 Enchilada Mixture
3 oz chopped ham or ground breakfast sausage cooked
1 cup shredded cheese
6-8 flour tortillas
1. Combine the six eggs, meat, cheese, and 1 cup of gravy in a bowl.
2. Pour a 1/3 cup of gravy onto the baking pan and spread it out to "grease the dish."
3. Roll the mixture into tortillas and place into a baking pan.
4. Top the tortillas off with 2 or 3 cups of gravy and bake for 35 minutes at 350.
