There's NOTHING quite like fresh muffins on a lazy Saturday morning! What's even better? Homemade muffins!
INGREDIENTS:
1 1/4 cup sugar
2 cups all-purpose flour
2 tsp. Baking powder
1 tsp. Salt
Pinch of cinnamon
Combine all the dry ingredients in a jar or another airtight container. Store in your pantry up to a year. If you want muffins immediately, mix dry and liquid ingredients and preheat the oven to 425.
LIQUID INGREDIENTS:
2 large eggs
1/2 cup milk
6 tbs. Melted butter
1 1/2 tsp. Vanilla extract
FILL the muffin tins about half way. Place muffin tray in the oven.
BAKE for 15 minutes or until golden and the toothpick comes out clean when poking the center.
TRY THESE VARIATIONS
For blueberry muffins add : 2 cups blueberries
For banana nut muffins add: 2-3 bananas smashed + 1/3 cup walnuts
For chocolate muffins add : 1/2 cup chocolate chips
