Savory Butternut and Acorn Squash Soup: Instant Pot to Table in 2 Hours!

Ah, the crisp autumn air. Enjoying the crunch of colorful leaves underfoot and the first batch of snowflakes on the ground. Speaking of soups, this is a creamy, savory soup that is perfect for those chilly fall days. The recipe is simple and fast to prepare. You will be surprised by how much flavor comes from such few ingredients - it's so satisfying! It will take about 2

hours to have a bowl of this tasty soup on your tabletop.


Serves 8-10 people

 

List of Ingredients

  • 1 acorn squash peeled and chopped

  • 1 butternut squash peeled and chopped

  • 3 chicken bouillon cubes

  • 4 tablespoons brown sugar

  • 2 Pink Lady apples

  • 13.5 oz can of coconut milk

  • 3 cups of water

  • 1 cup baby carrots or chopped carrots


Step 1: Let’s Get Started


Add all the ingredients, minus the coconut milk, into the instant pot.


Step 2: Set the Timer

Allow the ingredients to pressure cook for 20 minutes. Open the pot after 2 hours.


Step 3: You're almost done!


Add the coconut milk and use a hand blender to puree the ingredients into a delicious soup!


Step 4: Enjoy!


Optional: Add a pinch of pumpkin pie spice seasoning and butter or a few crackers.
